Porchetta Roasted Potatoes
- Roasted Porchetta (see recipe and video)
- Yukon gold potatoes, diced
- Pork fat drippings (or olive oil)
- Salt
- Pepper
- Tossed potatoes in the porchetta drippings, salt, and pepper.
- Roast them for about an hour prior to dinner or until golden brown
