Cast Iron Skillet Manchego Cheese Potatoes
  • 1 lb yukon gold potatoes, cubed or sliced
  • olive oil
  • ½ onion, thinly sliced
  • 1 tablespoon merguez spice
  • salt
  • pepper
  • ½ cup manchego cheese, grated
  1. Heat over to 375 F. In a large cast iron skillet, toss the potatoes and onions in olive oil, mergez spice, salt, and pepper. Cook until golden tossing ever 15 minutes. Add cheese and return to oven until melted and golden.
