Watermelon Gazpacho with Sheep Milk Feta and Cilantro

Ingredients
3 medium tomatoes
3½ cups of watermelon, diced
1 jalapeno, seeded
1 lime, juiced
1 english cucumber, peeled and cut into ½" pieces
¼ onion, sliced
1 tablespoon red wine vinegar
⅓ cup olive oil
¼ cup cilantro, roughly chopped
Watermelon, garnish
Feta, garnish
Instructions
Cut tomatoes into quarters and cut out the tough core. Blend the tomatoes in a Vitamix until completely smooth.
Add all the remaining ingredients to the blender and blend until smooth. Season to taste with salt, garnish with watermelon and feta, and serve immediately.
