Italian Squash Blossom Fritters
  • 1 recipe fritter batter (we used one from here)
  • 1 shallot, minced (see here for instructions)
  • 12 squash blossoms, chopped
  • 1 teaspoon rosemary, minced
  • 1 teaspoon sage, minced
  • 1 teaspoon thyme, minced
  • ½ cup Grana Padano, grated
  • Peanut Oil for frying
  • Maldon Sea Salt
  1. Start with your favorite batter recipe. Then add all of the ingredients listed above and stir just to combine.
  2. Add 2 inches of peanut oil to a heavy bottomed pan and heat it to 350°F. When the oil is hot, use a spoon dipped in water to scoop golfball sized amounts of batter and drop into the hot oil. Cook 2-3 minutes per side turning once halfway through cooking. Remove once golden brown. Drain on paper towels. Top with herbs and salt.
