Herb Roasted Potatoes
  • 1 lb yukon gold potatoes, scrubbed, dried, and sliced in half or quarters (depending on the size)
  • olive oil
  • French gray sea salt
  • 1 tablespoon parsley, chopped
  • 1 tablespoon rosemary, chopped
  • 1 tablespoon thyme, chopped
  • Freshly cracked pepper
  1. Preheat your oven to 375°F.
  2. Toss potatoes with enough oil just to coat. Add herbs, salt, and top with freshly cracked pepper.
  3. Cook until golden and crispy. Toss once or twice while cooking.
