Chicken (3-4 ounces per person) cut into 2-inch cubes
Red onion, cut into 2-inch pieces
Red, yellow, and green bell peppers, cut into 2-inch pieces
One pineapple, cubed
Instructions
Marinade the chicken pieces for at least 15 minutes in your favorite marinade or sauce.
Place all of the vegetables on a large sheet tray and drizzle with olive oil. Sprinkle with salt and pepper, then toss to coat.
Thread pieces of chicken and vegetables onto each skewer, leaving a small space between each piece, and alternating chicken and vegetables. We prefer to put several pieces of vegetables between each piece of chicken.
Heat a grill to high heat, then add kabobs to the hot grill and turn as needed. Remove as soon as the chicken is cooked through and the vegetables are tender.
