Preheat oven to 375F. In a large bowl, combine the bread, olive oil, and seasoning into a bowl and toss well with your hands. Line a sheet pan with a Silpat or a sheet of parchment paper.
Spread the bread on the sheet pan in a single layer. Add a final pinch of salt and bake for about 7-10 minutes. Toss and repeat until golden brown. Remove from the oven and allow to cool.
