One of our favorite things to make at home is pasta. We still love really good dried pasta like this, but you can be so much more creative with fresh pasta. It also cooks much more quickly. Our go to recipes are in the SPQR cookbook. The recipes are really reliable and the instructions provide lots of guidance. The book is filled with numerous fresh pasta recipes.

These pasta rollers (c/o) are an indispensable tool for making pasta at home. If you have a Kitchen Aid mixer (c/o)in your house, they are the perfect addition to your kitchen. They would make an amazing Christmas gift this year. They are heavy-duty, made in Italy, and give you really professional results. In these pictures, we’re making SPQR’s squash capellaci with dates and rosemary. We’d also put this book on your Christmas list. If you already have it here are a few other suggestions.

The KitchenAid pasta rollers are simple to use. You just attach the pieces to the front of the machine. The mixer’s motor powers them, so there’s no hand cranking. Having two hands free makes a huge difference. You can use the rollers to flatten sheets of pasta to make filled pasta (like we’re doing here), and the set also includes cutter attachments for spaghetti or fettuccine. We like to make a lot of pasta while we have everything set up. It freezes well in ziplock bags and takes about three minutes to cook from frozen.
