During our stay at L’Hotel Bleu in Carry-le-Rouet, we were fortunate to enjoy a rare dinner date at L’Oursin, the hotel’s brand new gourmet restaurant. With our son happily spending time with his grandparents, we took the opportunity to indulge in a quiet, romantic evening—an experience that turned out to be nothing short of extraordinary, especially considering that the restaurant had only been open for a week.
We arrived late in the evening, greeted by the sparkling lights of the boats in the port and the warm, inviting glow of the restaurant’s terrace. The tables were elegantly set, each adorned with beautifully crafted sea urchin sculptures that set the tone for the meal ahead.
L’Oursin’s menu is a tribute to the sea, with each course showcasing the finest local fish and seafood. Chef Ilane Tinchant has a deep passion for the ocean’s bounty, and it’s evident in every dish. The restaurant’s kitchen is a spectacle in itself—a glassed-in, open space where diners can watch the chefs at work, turning the preparation of each dish into a mesmerizing performance. What truly made our evening special was Chef Ilane Tinchant’s personal touch. Having honed his craft at the three Michelin-starred restaurant La Villa Madie in Cassis, he brings a wealth of experience and creativity to L’Oursin. Chef Tinchant personally delivered each dish to our table, as he did for all the diners, explaining the inspiration and ingredients behind each creation. This level of personal attention made the meal feel even more special.
As for the food, it was nothing short of spectacular. Among the standout dishes were a delicate oyster topped with caviar, which was as refined as it was flavorful. The seafood flan was a delightful surprise, rich and smooth with the essence of the sea. The squid, prepared in multiple ways, showcased the chef’s versatility and skill, while the turbot was perfectly cooked, melting in our mouths with every bite. The flavors were subtle and sophisticated, yet not overwhelming— a testament to the chef’s balanced approach to fine dining.
Throughout our meal, we enjoyed the picturesque view of the port, watching as old, salty French fishermen readied their boats for a night at sea. It was a scene straight out of a postcard, adding a touch of authenticity to our dining experience. L’Oursin at Hotel Bleu is more than just a restaurant—it’s a dining experience that perfectly captures the essence of the South of France.
