Some dinners happen because you planned ahead, and others because you stared into the fridge and thought, What can I throw together that actually tastes good? This pasta falls into the second category. A few sausages, a spoonful of mustard, a big scoop of crème fraîche, and suddenly, dinner feels like something you meant to make all along.

Radiatori pasta, which means “radiator” in Italian, holds onto thick, creamy sauces like a dream. If you can’t find it, fusilli or casarecce work too, but radiatori’s little ridges make it worth tracking down.
