Pasqua begins this Thursday night and runs through Sunday. Special dishes we’re excited about include Double 8 Buffalo Milk Ricotta, Minestra Maritata (braised pork, pork meatballs, pecorino, escarole, calabrian chili), Pizza Strapazzate (scrambled egg, salami, spring onion, fior di latte, Grana Padano), Lamb Verdetto (new potato, English pea, egg yolk, Grana Padano), Pastiera Napoletana (wheat berry, ricotta, lemon), Torta Pasqualina (puff pastry, buffalo milk ricotta, spinach, chard, spring onion, hard cooked egg), Potato Gnocchi (snap pea, English pea, cheese brood, pecorino riserva), and McFarland Spring Trout (fiddlehead fern, preserved bergamot, English pea). As always, the wine pairings are spot-on and include hard-to-find labels hand picked by Shelley Lindgren. - Presidio Social Club
