
Chef Xavier Mathieu, holder of a Michelin star since 2001, offers some of the most memorable food in Provence at Le Phebus & Spa in his gastronomic restaurant, La Table de Xavier Mathieu. Blending classic local flavors by combining rustic ingredients innovative techniques, Chef Mathieu creates modern twists on classical provençal dishes that are as beautiful as they are delicious.
The restaurant overlooks the provençal countryside from which the dishes are inspired. Our son particularly loved the fennel butter and the delicate tian – dishes that showcased Chef Xavier Mathieu’s skill for elevating simple ingredients to new heights. The homemade mustard served with lamb was another standout, adding a unique and flavorful touch to each bite.






Our favorite dish was the aforementioned lamb, perfectly cooked and accompanied by a spicy mustard. The lobster shrimp and grits was another highlight, combining the freshest French seafood with a creamy, comforting base. Each dish was a testament to Chef Xavier Mathieu’s skill and passion for creating exceptional cuisine. Don’t miss the warm soufflé topped with local mead and ice cream. The wine pairings, which were expertly chosen to enhance each dish, perfectly complemented the dining experience.




The changing seasons promise new and exciting dishes, and we’re curious to see what Chef Xavier Mathieu will create next. The combination of exceptional food, a welcoming atmosphere, and the chef’s personal touches makes dining at La Table de Xavier Mathieu a truly unforgettable experience.
