The summer is warming up and we’re ready for more warm weather cocktails. Here are some of our favorites, but today we’re sharing this amazing gin cocktail from San Francisco’s Hog Island Oyster bar.
This take on the Tom Collins uses Sea Gin, a local Briny gin made with foraged nori, bay, sage, and lemongrass. This cocktail is perfect to go with oysters asget a refreshing start to your bbq. If you’re looking for seaweed to garnish, you can find it from Water2Table, ask your local fishmonger, or just garnish with the lime wheels.
Hog Island Oyster Co. Sea Collins
Ingredients
- 2 oz Sea Gin
- .75 oz simple syrup
- .5 oz lemon juice
- .5 oz lime juice
- 1 large pinch of seaweed
- soda water
- 2 lime wheels
Instructions
- Shake the gin, simple syrup, lime, and lemon juices, and dump into a collins glass.
- Top with soda.
- Garnish with seaweed down the sides of the glass and two lime wheels.
