As the weather gets warmer and summer approaches, we’ve been turning our attention to more refreshing cocktails that can be enjoyed on a warm sunny afternoon. This Cucumber Rickey from Shake: A New Perspective on Cocktails is just what we were looking for.

A rickey is a carbonated cocktail made with gin or bourbon, lime, and soda water. It’s said to have been invented in Washington, D.C. in the 1880’s. The most popular rickey cocktails right now are made with gin.

We love cucumbers, so when we received a copy of Shake and the Mason Shaker from W&P Design, this cocktail was first on our list to try. It’s easy to make and super delicious. Just muddle your mint and cucumbers in the base of your shaker, add lime juice, gin, and ice, and give it a quick shake. Strain into an old fashioned glass filled with ice, and top with ginger beer. For a really beautiful presentation, try lining the inside of your glass with thin slices of cucumber and then filing it with ice. The ice will hold the cucumber slices in place. Cucumber Rickey Cocktail
  • 2 oz gin
  • 3 cucumber slices (plus extra for garnish)
  • 2-3 sprigs of fresh mint leaves (plus extra for garnish)
  • Juice of one lime
  • Fever-Tree Ginger Beer
  1. Muddle mint leaves and cucumber slices in the bottom of a shaker. Add lime juice and gin, fill with ice, and briefly shake. Strain into an old fashioned glass filled with ice, and top with ginger beer. Garnish with fresh cucumber slices and mint sprigs.
