L’Abysse Monte-Carlo, newly opened and already making waves, offers a unique dining experience that blends the culinary traditions of Japan and France. The day after the opening night of the Monaco outpost of the two-starred Parisian institution, we found ourselves at one of the few tables in the sleek, modern dining room, though the counter is really where you want to book if you can—it’s the best seat in the house for an intimate view of the chefs in action.
Our son joined us, so we opted for a table, but it didn’t take away from the experience at all. The restaurant’s atmosphere is minimalistic yet elegant, with a contemporary design that feels luxurious without being overdone. And let’s talk about the silverware—ornate, custom-made pieces of art in silver that added an extra touch of sophistication to the entire meal.
L’Abysse offers two tasting menus, and the style of the dishes reflects the approach found in its Paris counterpart, where we dined when our son was just three months old at his first Michelin-starred restaurant. The attention to detail in the Monte-Carlo location is just as meticulous. Delicate, artful dishes were presented one after another, each more refined than the last.
From the steamed whelk shell served with abalone and tangy vegetables, to the intricate sushi nigiri collection, the menu felt like a journey through luxurious flavors and textures. Each bite was a thoughtful composition, reminiscent of both Japanese precision and French elegance. One of the standout dishes for us was the iced almond milk with dried beef, paired with yuzu ponzu and grass oil—a dish that was entirely unexpected but utterly delicious.

The chefs, straight from Paris, worked in perfect harmony behind the counter, adding a theatrical element to the evening that guests seated at the counter get to witness up close. The room, though small, feels intimate and exclusive, adding to the sense that you’re part of something special.
Desserts were just as impressive, with highlights like marinated strawberries with aloe vera and glazed shiso and crispy puff pastry with seaweed, each a perfectly balanced end to the meal.
