We both love potato salads. During our Farm House stay, we wanted to try something different to go with our grilled fish. We decided to make this meyer lemon potato salad with red potatoes.
We relied on fresh potatoes from Eatwell at the farmers market and meyer lemon juice and zest to flavor the dish. Make sure your potatoes are scrubbed clean. We like to use this vegetable scrubber. It does a great job! We love to use this to juice our lemons. It’s great because it filters the seeds and captures the juice all in one.
We even picked our parsley fresh from the garden. Such a treat! If you don’t have a garden, this or this would be a fun way to grow herbs in your kitchen or window. We’re thinking about trying it out ourselves.
This was a delicious, lighter version of a potato salad. It would be refreshing alongside any summer BBQ or picnic. There’s no mayonnaise or mustard required for this one. Check out some of our other side dish recipes here, here, and here.
- 3 medium potatoes
- ½ Meyer lemon, juice and zest
- small handful Parsley
- Oil
- Salt
- Pepper
- Boil potatoes in a large pot of salted water until they are fork tender. Remove potatoes from the pan, cool, and rub off the skin with a paper towel. Chop into 1 inch cubes.
- To a bowl, add the potatoes, lemon juice and zest, parsley, and drizzle with good olive oil. Toss to coat and add salt and pepper to taste.
