Smoked Haddock Mac and Cheese

 

Smoky. Salty. Delicious. Just in time for fall, this mac and cheese inspired by The Seafood Shack in Ullapool Scotland is layered with spicy Spanish chorizo, smoked haddock, and creamy cheddar.

On our first visit to Scotland, we hoped to make it to the far northern Highlands, but we quickly learned we had planned a bit too much for one visit. If you are planning a trip to Scotland, know in advance that once you get off the main motorways, the roads are very small and it generally takes much longer to drive between towns in the Highlands than you would think from looking on a map.
