Last time we made BBQ pork, we had so much left over we ended up eating it for days. Pork shoulders are usually huge, and you can only eat so much BBQ before it starts to get old. We put our leftovers in the freezer, and pulled them out a few weeks later for a quick weeknight meal of BBQ pork tacos! Just a pick up a few simple ingredients on the way home and get ready for a mini-fiesta. These are perfect paired with a Margarita or a Paloma cocktail.
BBQ Pork Tacos

Ingredients
- BBQ pork
- Tortillas
- 1 jalapeno, sliced thinly
- Greek yogurt
- Hot sauce
- Pickled red onions*
- 1 avocado, diced
Instructions
- Assemble tacos with above ingredients to the amount that you prefer. Feel free to add or leave out any toppings.
Notes
*Thinly slice a red onion and place in a glass or plastic container. Cover with lime juice and a small pinch of salt. Stir and let sit in the refrigerator for at least one hour.
