Pimento Cheese Dip

The Kentucky Derby is this weekend, so in preparation we’re making a key Southern staple, pimento cheese dip.  It’s actually pretty simple. One key we found to making the best pimento cheese dip is to grate your own cheese. Do not buy pre-grated cheese! We already tried it and the texture is not the same. We like to use a Microplane or a box grater to grate a block of cheese. Be sure your pimentos are well drained. It’s fine to use pimentos from a jar, but let them drain in a small strainer before adding them to your dip.

We don’t make pimento cheese dip often, but when we do, we like to keep it in these jars for storage and serving. Not only are they functional but you can serve the dip right out of the jar. Pimento Cheese Dip

Ingredients
  • 8 oz cheddar cheese, grated
  • 2 oz whipped cream cheese
  • ¼ cup mayonnaise
  • ¼ teaspoon hot sauce
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder
  • 4 oz pimentos, well drained
Instructions
  1. Combine all, chill, and serve with crackers.
