Several years ago, the head barman (now Maitre) Stefano Amato made us the best dessert cocktail for our anniversary, a pear and ricotta martini, so we made our way back to find out exactly how to make it. Garnish your martini with either a slice of pear on the side or crumble Italian butter cookies on top. Either way, you'll have an amazing cocktail. For the ricotta cream, make sure you use a good, rich ricotta. Hand dipped or fresh is our preference. It will whip better into the cream and taste even more delicious!
