This watermelon cocktail is perfect for sipping on the patio at Hog Island Oyster Co. or at home poolside. A sweet and spicy cocktail that’s garnished with a dried Thai chile, it’s the first cocktail we ever ordered at the Ferry building when we moved to San Francisco, and it’s still a staple on the Hog Island menu today! Bar Manager Saul Ranella serves this summer time cocktail in a coupe glass. Hog Island Oyster Company’s Watermelon Wake

Ingredients
- 1.5 oz Hanson Organic Sonoma Cucumber Vodka
- 1.25 oz Fresh Watermelon Juice
- .75 oz Simple Syrup
- .75 oz Lime Juice
- 4 dashes of Peychaud’s Bitters
- 1 dried Thai Chili
Instructions
- Fill a cocktail shaker with ice, then add the vodka, watermelon juice, simple syrup, lime juice, and bitters.
- Shake and double strain into a coupe glass.
- Garnish with a whole dried Thai chili by resting it on top.
