This watermelon cocktail is perfect for sipping on the patio at Hog Island Oyster Co. or at home poolside. A sweet and spicy cocktail that’s garnished with a dried Thai chile, it’s the first cocktail we ever ordered at the Ferry building when we moved to San Francisco, and it’s still a staple on the Hog Island menu today! Hog Island Oyster Company's Watermelon Wake
  1. Fill a cocktail shaker with ice, then add the vodka, watermelon juice, simple syrup, lime juice, and bitters.
  2. Shake and double strain into a coupe glass.
  3. Garnish with a whole dried Thai chili by resting it on top.
