Hog Island Oyster Co. is one of the best places to go for oysters and cocktails in San Francisco, and their Port Authority Old Fashioned is one of our favorite cocktails for the fall and winter. If you’re into whiskey, you’ll for sure be into this cocktail that Bar Manager Saul Ranella has put together. If you’re looking for more cocktails from Hog Island, check them out here.
Saul uses a port reduction to make this Old Fashioned, and typically uses Manzanilla Sherry to make Hog Island’s cocktail. To make the port reduction, combine equal parts port wine and sugar in a pan. Warm on the stove until it desolves. Remove from the heat, allow it to cool, and then once cooled add a small amount of rose water to taste.
Port Authority Old Fashioned

Ingredients
- 2.5 oz Knob Creek Rye
- .25 oz Aromatic Port Reduction (see above)
- 2 dashes Orange Bitters
- 3 dashes Angostura Bitters
- Orange peel
Instructions
- Build the cocktail in a rocks glass.
- Stir with a big cube of ice.
- Garnish with orange peel
