If you’re looking for a delicious and hearty appetizer or a light meal, these potato onion tortas are perfect. We made these for a holiday dinner party and they were gone before we knew it. They were so good we made ourselves another batch and ate them for dinner with a salad for a few nights in a row.
We topped our potato onion tortas with a dollop of sour cream, smoked salmon, and chopped chives. We found this smoked salmon that easily flakes into pieces. We absolutely loved it. If you can find it, try it! To make the shapes, you can either use a knife to cut them or biscuit cutters, which create uniformed shape and size. We served our onion tortas on these slate boards.
